We stopped in at Nacho Mama's and had yet again another wonderful meal.  We sat on the patio and our server was exceptional and made us feel so at home for a few hours last Saturday night.
 


We ordered the three menu items below and the food was phenomenal.

Chipotle Steak Sandwich $13

Grilled flank steak, Pico de Gallo and melted cheese on freshly grilled jalapeno-cheddar bread. Plate includes Nacho Papa's spicy potato wedges.




Chimichanga $14

Your choice of seasoned ground beef, shredded chicken, shredded beef or pulled pork. Wrapped and fried in a flour shell, mixed with rice, beans and shredded cheese. Topped with Nacho Daddy’s chimi sauce. Served with rice and beans.




Nacho Mama's Nachos $12

Made with melted cheddar and jack cheeses, Pico de Gallo, lettuce, sour cream and guacanole. Served with your choice of beef, chicken, pulled pork of Tijuana cocktail.






Nacho Mama's in Stillwater Minnesota is always a wonderful time with friends and family.  Nacho Mama's food is so good it is hard to not want to go again the next weekend.  Lets all meet there on Saturday.

Manicotti


Manicotti

 

 

This is a wonderful meal but can be very time consuming so I don’t make it very often but when I do it will be the best thing on the Netty Q’s menu. 

 



 

I start by boiling a box of manicotti noodles for about half the time that the box recommends.  While they are cooking I will put the manicotti filling together.  It consists of raw ground beef, pork, chicken or turkey, you can pick what you like or use more than one.  I will use some hot sausage for mine but we like it spicy.   I will add about 4 oz of cream cheese, seasoning, ¼ cup of cottage cheese, shredded cheese of your choice and as much as you would like.  You can add any seasoning like raw onion, garlic, peppers, parsley or basil.

 







Mix up the raw meat, cheeses and seasoning.  

 

 



Pour some sauce on the bottom of the pan and on top of the stuffed manicotti, whether that is white or red that is your call either will be great. Add more shredded cheese to the top and put it in the oven covered with tin foil for about 30 minutes on 350 degrees then uncovered for another 20 minutes until noodles are cooked.
 
 


 
 
 
Serve and save the rest for leftovers.

Donut

I decided this beautiful Sunday to try my hand at making homemade Donuts. They turned out perfect, light and flavorful. The donut and frosting recipes are below. Have fun and enjoy.


 Donut







Mix the donut dry ingredients together first 1 Cup Sifted flour, 1Tbs Baking powder, 1 Tbs cinnamon and ½ tsp salt.






Mix wet donut ingredients 1 egg, ½ cup milk, 1 Tbs vanilla, and ¼ cup vegetable oil. Once that is mixed add ½ cup sugar.







Mix well and add to dry ingredients a little at a time while continuing to mix well. Here is where you can add additional flavor if you want. I added some peanut butter powder and some unsweetened cocoa powder to these homemade donuts. You can pick what flavors you want but be careful adding too much liquid or dry ingredients because it will change the thickness.


Once the homemade donut batter is combined you can put the batter in a 1 gallon storage bag. Cut the corner off and squeeze batter through hole into donut pan. Fill the molds only half full.
Bake the homemade donut batter on 425 degrees for 7-9 minutes.

Take the homemade donuts out of the oven and cool.


I used a old electric dual donut baking machine probably popular in the 70's or 80's. It worked great and the donuts were superb.
The homemade donut machine needed to be plugged in for 10 minutes to warm it up. I filled the bottom of the mold and closed the top and let it for 5 minutes.












Once cooled you can frost the homemade donuts the recipe is below.








Frosting

Mix ¼ stick of butter melted, 1 tps vanilla and ¼ cup powder sugar together. If more moisture is needed you can add some milk to thin it out. You can add flavors if you like. I added just some vanilla extract but you can add anything you would like. Melting some chocolate chips in it would have given it a rich chocolate flavor.

Excelsior Big Island Blonde Beer

We traveled to Stillwater Minnesota last weekend and I tried a local beer.





We sat on the patio of the Freight House overlooking the St. Croix River. The view was fantastic and the atmosphere was very festive. The wait staff seemed very helpful. There website with hours, location and events calendar is below.

Excelsior Big Island Blonde Beer




I tried the Excelsior Big Island Blonde Beer on tap. This is brewed in Excelsior Minnesota. The website gives the following times for the tap room and tours in case you are interested in touring it. The Excelsior Big Island Blonde Beer was a little hoppy but has a very fruitful favor. The Big Island Blonde Beer reminded me of a Blue Moon with the fruity flavor. One of the great beers made in Minnesota.  Great refreshing summer flavored beer with a hint of orange or lemon. Some other beers the Freight House had on tap are below.

Cornbread

I love to start with some pre made box items like a cornbread mix and make a home cooked meal out of it. We are all very busy and I don’t want to spend too much time in the kitchen but still want to prepare and eat great food. I paired this with chilli recipe to follow.


Cornbread





I pour on box of cornbread mix in a bowl.  I will follow the box instructions but to that I will add any or all of the following items: chopped green chilies, jalapenos, peppers of any color, onion, black beans, cheese of any kind and any other Mexican item you want to add.Now you can add about 1/3 of a cup of each item above.You could add some seasoning now and anything you like is fine.I added some Tai Pepper powder.If it seems too wet when you are done adding extra things you can add a little flour.




Mix cornbread  ingredients and put into a nonstick sprayed pan. I used a 9 x 9 for mine.


Bake the cornbread on 350 for about 40 to 60 minutes or until it is not tacky when poked in the center with a toothpick.





This spice cornbread is great when served with Chili.That recipe is to follow.

This is a wonderful beer cheese soup that will warm you up and give you the extra protein you need to do all that spring cleaning. I you don't want to add the beer you can just add a little more chicken broth to equal that amount of beer you would normally add. Either way this soup is wonderful. I paired it with some cornbread. That recipe is in this blog if you want to look that up too.



Beer Cheese Soup




Sauté onion and garlic together for a few minutes then add 1 cup celery and carrots to the pan and cook until soft. Add 1tps hot pepper sauce, ½ tsp cayenne, ½ tsp salt and pepper or more if you like any of these ingredients.










Add 3 cups of chicken broth, and 2 cups of beer, 1/3 cup butter and stir to combine. Add slowly while stirring 1/3 cup flour.











Add 4 cups of milk or half and half. Stir until mixed well. Add 6 cups of shredded cheddar cheese or more if you like it creamy. Then add 1/3 cup of cream cheese and 1/3 cup of sour cream.










Last thing to add to this beer cheese soup is 2 TBS of Worcestershire Sauce, 1 TBS Dijon mustard, and 1 tsp dry mustard.








Simmer the beer cheese soup for 10 minutes and serve. I made cornbread to go with the recipe that is in this blog a couple of days ago.

Pineapple Angel Food Cake

This Angel Food Cake with Pineapple is as easy as 1, 2, 3 and taste out of this world. It is so light and sweet just in time for summer.




Pineapple Angel Food Cake





Take a box of angel food cake mix and pour it into a bowl. Add one 20 ounce can of crushed pineapple.





Mix the pineapple angel food cake mix well and put into an ungreased tube pan and bake for 35- 45 minutes until it is golden brown and you can insert a knife and it comes out of the angel food cake clean.






Let the pineapple angel food cake cool 10 minutes and then flip over onto a cake plate. Sprinkle with powder sugar. Cover remaining angel food cake after completely cooled.

Hot Dog Grilled Cheese Sandwich

These are two great recipes for the Labor Day holiday weekend.  This is a wonderful grilled cheese sandwich made with cheese curds. Easy to make. Start to finish in less than 10 minutes.





Hot Dog Grilled Cheese Curd Sandwich





Start by buttering 4 slices of any bread of your choice. Slice 3 hot dogs cut in half and warmed.



Put 2 slices of buttered bread in a hot frying pan. Arrange 1 1/2 sliced hot dogs on a piece of bread. Sprinkle hot sauce on dogs and arrange cheese curds cut into small pieces and top with second piece of bread.





You can put some chilli on top of this hot dog grilled cheese curd sandwich with or instead of the hot sauce.




Cook on medium heat until bread has toasted and cheese has melted. Flip with care or all the hot dogs will fall out until the cheese is melted.




Slice the Hot Dog Grilled Cheese Curd Sandwich and Enjoy.






Simple quick and easy hot dog recipes



Another Labor Day recipe for those family gatherings is Rhubarb Pie.  The recipe is below





We had extra Rhubarb this spring so we decided to make a pie and pair it with fresh strawberries. It was wonderful and we shared it with many family and friends which is the real reason for cooking. Not to just eat but to build and nurture relationships.






Strawberry Rhubarb Pie


Crust:
2 ½ Cups all-purpose flour
1 Cup cold Butter cut into 10 slice
1 tsp salt
2 tsp Sugar
6-10 TBS Ice water

Strawberry Rhubarb Pie Filling:

2 cups chopped Rhubarb
2 Cups Sliced strawberries
1 ½ Cup Sugar
¼ cup flour

Directions:

Pre heat oven to 350 degrees.

Put Flour, salt and sugar in a food processor and mix together. Add the butter and pulse until it is crumbly. Add ice water one TBS at a time until the dough holds together. Divide it to two equal parts, cover with plastic and refrigerate for 30 minutes.

Roll out dough for the bottom of the Pie. Cut it to within a ½ inch from the pie plate rim. Set aside.

Put diced rhubarb, sliced strawberries, sugar and flour together. Stir well to incorporate the sugar with all the fruit.















Pour into pie pan and roll out second crust to cover pie. Cut to a ½ inch of the pie plate rim. Squeeze the ends together tight to hold all the juice inside while it is cooking.

Put a few slits in the top of this strawberry Rhubarb Pie for steam to escape and brush crust end with egg wash.



Bake the Strawberry Rhubarb Pie on 350 degrees for about 40 minutes until it is golden brown. Sprinkle with sugar when it comes out of the oven.



Let cool and serve.
