Chicken Macaroni Cheese with Granola Crunch Topping

This recipe was designed for a granola challenge I am part of this month.  It is unique and I think the kids will love it because it is sweet and there is chocolate in the granola I used.





Chicken Macaroni Cheese with Granola Crunch Topping

 

 

 

 

Sauté chicken with desired seasons until cooked to 165 degrees internally.   I used onions, peppers, garlic and olive oil for the pan.   Usually some italian, chili and paprika seasoning.  Cut into bite size pieces and put aside.

 



 

Prepare 3 Cups Macaroni following bag or box instructions.  Add to the macaroni when it is cooked 4 ounces of cream cheese, 1 cup of shredded cheddar and 6 ounces of processed cheese.  Cook on low heat until all the cheeses are melted and mixed together.  You can season with whatever you would like before adding to the bake safe dish.

 



 

Take an oven safe dish and pour the macaroni and cheese in the bottom, top with spinach leaves, chicken chunks and shredded cheese. 

 


 
Sprinkle  1 Cup of Golden Girl Granola with chocolate over the top. 

 



Put 6 pats of butter on top of the granola. 

 Bake the granola mac and cheese on 350 degrees for 30 minutes.








Let cool and Enjoy.

Pizza Mac and Cheese Casserole


This recipe was inspired because I needed to use up some prepared bags of Pizza Mac and Cheese.  It seemed to boring so I did what I always to and spiced it up.

I started by boiling a prepared bag of Pizza Mac and Cheese per the package instructions. 


 
Then I added to the Mac and Cheese about 2oz of cream cheese, scoop of sour cream, and some shredded mozzarella and lots of cheddar cheese. This is where I will taste it to make sure it is spicy because I love spicy.

You can add all kinds of ingredient.  This time I added some hot peppers and boiled the noodles in the hot pepper juice which adds more heat.  I added a little finely chopped onion, red peppers, pepperoni and mushrooms to it.

 




 

I put the pizza mac and cheese in a pan and topped with of course more cheese, some seasoned bread or cracker crumbs of your choice and a few pats of butter on top.

 

Bake the pizza mac and cheese at 350 degrees for about 30 minutes or until crumbs are toasted and the center is hot.

Wienie Mac and Cheese


Wieners were a staple in my house growing up.  We would add them to box mac and cheese for a delightful dinner.  This is the adult mac and cheese from scratch that I make when I am looking for those nostalgic childhood comforts.

Bring water to boil in a 2 qt sauce pan or whatever size you like.  When water is boiling add macaroni and cook until done.   The box should have cooking directions if you need them.












When macaroni noodle are done drain water and add some butter.  Keep over low heat and add any or all of the following items.

Cream cheese, sour cream, and lots of cheese of any kind or flavor. (when I am feeling bold I add blue cheese)  Whatever your heart desires or your provisions provide.

I stir until everything is melted and hot.  Add the sliced up skin on Wieners to the mac and cheese.  If you don’t have wieners on hand you substitute in bacon, ground beef or tuna. 



Add spices to taste.  I will use chili pepper, garlic, paprika, parsley, hot sauce, sriracha and cilantro.  Remember this is Adult mac and cheese so go wild with the seasoning.  Taste it periodically and add more as needed.







Plate and garnish with more cheese and feel the comforts of your childhood.
