Egg Muffins


 
This is a wonderful thing to make and take on the go.  It is full of protein and easy to eat on the run. 

 


 Egg Muffins
 
 
 

First start by pre heating the oven to 350 degrees.  Spray a muffin pan with non-stick like Pam. 

 

I chopped up a bunch of veggies and some sausage links or ham either will be wonderful.  You can add whatever you want but don’t forget to season with some salt, pepper and anything else you like.  I added some chopped peppers, onion, potatoes, Jalapeno peppers and mushrooms. 

 


 

Fill each muffin tin with veggies and meat until half full then top with some cheese.   Beat together 8 to 12 eggs and pour into each muffin space until it is almost to the top. 

 










Bake for about 20-30 minutes or until you can insert a toothpick and it comes out clean.  Let cool and enjoy.  They can be refrigerated for up to a week and warmed in the oven or microwave.

Ham Potato Egg Bake


This Ham Potatoe Egg Bake was a great way to use up lots of extra stuff in the refrigerator and pantry.  It turned out wonderful and so full of flavor.  Our breakfast guests loved it.

 

 Ham Potato Egg Bake

 



I started the Ham Potato egg bake with cooking 4 large potatoes in the microwave for about 10 minutes, flipping them every 3 minutes of so.  You can use baked potatoes or bake them in the oven.  I just wanted to fix this quick.

Let them cook and peel the skin off them.

 

I used a 9 x 13 pan and prayed it will with nonstick spray.  I sliced the potatoes into the bottom of the pan in whatever size pieces you would like.  I sliced mine. 
 
 
 
 Next you can add some butter and a few pieces of cream cheese.  I then diced green peppers.  I seasoned with salt, pepper, celery salt, garlic and paprika.  You can add any vegetables you like and the amounts are up to you. 

 

 

 

I added some ham cut in to pieces.  I mixed 6 eggs with some half & half and poured it over the potatoes and ham.   You can use left over braut or hamburger chopped up small since this is grill season instead of or along with the ham.

 

I let the Ham Potato Egg  dish bake for about 20 minutes and then took it out for the last layer.

 




I topped that with some Cheddar Jack cheese.    We love cheese so I probably put too much on but that is the way we love it.

 

 

The ham potato egg bake went back in the oven for about 15 more minutes.   I let it cool for about 5-10 minutes and served it with hot sauce and sour cream.
