This is a wonderful thing to make and take on the go. It is full of protein and easy to eat on the
run.
First start by pre heating the oven to 350 degrees. Spray a muffin pan with non-stick like Pam.
I chopped up a bunch of veggies and some sausage links or
ham either will be wonderful. You can
add whatever you want but don’t forget to season with some salt, pepper and
anything else you like. I added some
chopped peppers, onion, potatoes, Jalapeno peppers and mushrooms.
Fill each muffin tin with veggies and meat until half full
then top with some cheese. Beat
together 8 to 12 eggs and pour into each muffin space until it is almost to the
top.
Bake for about 20-30 minutes or until you can insert a
toothpick and it comes out clean. Let
cool and enjoy. They can be refrigerated
for up to a week and warmed in the oven or microwave.
