Beef Enchiladas

The Homemade Tortilla recipe was posted in the blog this week.  If homemade tortillas are too much for you substitute the store bought flour tortillas.  You can use small or large tortillas it is up to you.

Homemade Tortilla Recipe







Start by browning ground beef with diced peppers, onions, and jalapeno. You can substitute any kind of meat you want if you don’t want ground beef. Ground chicken or shredded beef or chicken will also be fine. Drain the beef and add a scoop of sour cream and 2 ounces of cream cheese. Heat until it is melted and gooey. I poured about ¼ cup of the enchilada sauce in with the meat sauce. Set aside until we build the enchiladas.

Open a large can of Enchilada sauce and shred about 3 cups of your choice of cheese. 

 
Put some enchilada sauce in the bottom of a baking dish, any size oven safe dish will work.  Size of the dish is dependent on how many you are cooking for and what you would like for leftovers.

 

Put some meat in the tortilla and top it with sauce and cheese.  Roll it up and set it in the baking dish fold side down.  Repeat with the rest of the tortillas. 

 



Pour the remaining enchilada sauce on top of the rolled up enchiladas.  Sprinkle with the remaining cheese and if you want to add more cheese pile it on.  Too much cheese is never a problem.

 



Bake on 350 degrees for about 45 minutes. 

 

Let cool for a few minutes before serving.
