Potato Skins

I peeled the potato skins from the potatoes that I boiled for potato salad. I kept these when I would have normally thrown them away. So I took all the potato skins and put them in the refrigerator. I cooked up crispy potato skins.

Potato Skins

I took a bunch of the potato skins and put them on a greased on a large cookie sheet pan.

I toss the potato skins in olive oil and season them well. I used salt, pepper, cayenne, paprika, garlic, onion powder, Italian seasoning, and celery
salt to season.

I bake the potato skins on 400º for about 40 minutes flipping every 10. Bake the potatoes until brown and cripy. Top with shredded cheese when it comes out of the oven. Top with all your favorite toppings. I added some sour cream and parmesan on top of the potatoes and they were wonderful.

Cheesy Potatoes

This is a wonderful cheesy potato recipe for any holiday or cold night home.   This was my mother's favorite recipe and will be yours too.  They were truly amazing. The potato is a good source of vitamin B6, Potassium, Copper and Vitamin C.  Check out the link below for more health benefits to eating Potatoes.

Cheesy Potatoes

Boil potatoes and when they are cool enough peel and cut up in little squares.  This can be done the day before for convenience.

Cut up butter and cheese to put on top.  Add plenty of salt, pepper, slice a stick of butter, a few scoups of sour cream, and half a package of cream cheese.  Stir and add cheese next.  A processed cheese works best.  (Velveta works well)

Bake on 350º for about 20 minutes then take out and stir. At this point you need to taste it to see if it needs more seasoning.   Add more cheese if needed.  Return to oven for another 20 minutes or until these cheesy potatoes are hot through.

Loaded Mashed Potatoes

Up These Mashed Potatoes loaded with all kind of goodness.  They can be made with any or all of the ingredients below.  You can pick which ones you like best.

Loaded Mashed Potatoes

Start with cooking potatoes by boiling them in salted water until tender. I used baby red potatoes and left the skins on but you can prepare them for boiling any way you want.  Once they are cooked so that you can poke a fork in them without resistance you can rinse the water off them.  I mash them and add 1 to 2 sticks of butter, one 8 once package of cream cheese, some fresh garlic (garlic seasoning will work too),and 1 or 2 big scoops of sour cream any flavor you like ( I used onion and chive sour cream).

Once it is all mixed and mashed up then add some salt, pepper, chives, parsley, Italian seasonings.  This is where you can add any other seasoning you like. Make sure to taste and add more of anything above it it seems to plain.

Serve hot.

Super Easy Pot Roast

Super Easy Pot Roast

This is a wonderful recipe because the crock pot does most of the work.  It can be loaded in the morning and it will be ready for dinner.  Makes for a wonderful comfort meal on cold nights plus extra for leftovers all week.  It can be made with any kind of vegetable you like and remember to not add anything you don’t like but more of the ones you do.

Take your cut of meat and season it with whatever you like.  I use a grill rub and paprika.  Next sear it on both sides which will only take a few minutes or if you don’t have time that is fine just skip to put roast in crock pot and add enough water directions.

**(Sear definition: Grease a pan and heat it up so it is hot.  Drop the meat in it and leave it for about 5 minutes until the meat turns brown but watch so it doesn’t burn. Flip it and do the other side and do the same.  This is done to hold in the moisture of the meat but is not a necessity.)

Put roast in the bottom of the crock pot.

If you seared the meat take the frying pan that you used and add a little water.  Stir it so all the bits on the bottom have come off the pan and pour it over the Roast in the crock pot.

Add enough water, bouillon or some other fluid to cover the meat plus a little more.  (Apple juice would work)

You can then add any or all of the following: potatoes, carrots, celery, onions, Brussels sprouts, zucchini, peppers, squash or sweet potatoes.  If I have forgotten a vegetable you love go ahead and add it.

Season well with whatever you like, cook on low or high depending on your slow cooker for 5-7 hours or until the meat is 160 degrees.  This super easy Pot Roast is done.

**(I use salt, pepper, garlic, parsley, basil, cumin, paprika, chili powder, and whatever looks good at the time.)
