Loaded Mashed Potatoes

Up These Mashed Potatoes loaded with all kind of goodness.  They can be made with any or all of the ingredients below.  You can pick which ones you like best.

Loaded Mashed Potatoes

Start with cooking potatoes by boiling them in salted water until tender. I used baby red potatoes and left the skins on but you can prepare them for boiling any way you want.  Once they are cooked so that you can poke a fork in them without resistance you can rinse the water off them.  I mash them and add 1 to 2 sticks of butter, one 8 once package of cream cheese, some fresh garlic (garlic seasoning will work too),and 1 or 2 big scoops of sour cream any flavor you like ( I used onion and chive sour cream).

Once it is all mixed and mashed up then add some salt, pepper, chives, parsley, Italian seasonings.  This is where you can add any other seasoning you like. Make sure to taste and add more of anything above it it seems to plain.

Serve hot.

Turkey Pot Pie

This is a wonderful way to use up all those leftovers from Thanksgiving.  Turkey Pot pie makes a wonderful comfort food for cold Sundays. Remember where ever Turkey is used you can substitute Chicken to make the famous Chicken Pot Pie

Turkey Pot Pie

I started by sautéing onion and jalapeno. Then cut up leftover Turkey into bite size pieces. In a large bowl I mixed turkey, onions, jalapeno, green beans, corn, carrots, peas, and broccoli or any other vegetable you would like to add.

Then add some cream soup of your liking. (I used broccoli potato cheese soup and cream of mushroom).  If you use condensed soup do not add any water or milk.  A couple of cans should be enough. I will add some shredded cheese whatever flavor you like. Then pour the mixture in a pie plate, sprinkle 2 tbs of four or cornstarch, and I will put a layer shredded cheese on the top of ingredients under the crust. cover with crescent rolls, biscuits, or a pie crust. Slit some holes for steam to escape if you use pie crust.

Bake for 40 minutes on 350 degrees or until the crescent rolls, biscuits or pie crust is lightly golden brown and heating through.

Scrumptious Stuffing

This is a wonderful recipe to make unforgettable scrumptious stuffing for family dinners.  Thyme, sage and oregano will make this unforgettable.

Scrumptious Stuffing

I will start with browning one or two rolls of pork sausage with onion, celery, mushrooms and peppers of your choice.

Put two bags of stuffing mix in a big bowl I use herb flavored but you can use plain if you want.

Melt 2 sticks of butter in a pan and add chicken broth a can or two. I used a carton of it.  Mix together stuffing, pork sausage, onion, celery, peppers and butter broth mixture. I season with pepper, Italian seasoning, thyme, sage, oregano, celery salt, parsley and garlic.

I put mixed stuffing in a large oven safe dish and refrigerate until time to cook.

Bake 350 degrees for 40- 45 minutes or until hot through the stuffing. Very easy scrumptious stuffing mix which can be made for more than Thanksgiving.

Enjoy

Fried Chicken

Tuesdays will be flashback dinner night. I will pick a childhood dinner recipe and made into adult form. This is my first recipe. Fried Chicken just like grandma made except it is oven fried which is better for your health.  This chicken had amazing crunch and flavor you should try it.

Fried Chicken

I used drumsticks but any parts of the chicken will be fine.  I seasoned the drumsticks with all kinds of things.  You can use whatever you like.

Pre heat oven at 375 Degrees

I have a container with 2 eggs or 1 Cup of egg substitute, yogurt or sour cream.  All will work to adhere the flour mixture to the chicken.  I will add to the mixture some hot sauce or soy sauce or any other liquid to add extra flavor.

I put together some crunch for the outside of the chicken.  I put into a container flour, cornmeal, cornflakes and a crushed up high fiber cereal.  About 2 cups will be fine. I then put a package of dry ranch dressing mix in and add seasoning and parmesan cheese.  Remember chicken can be really plain so make sure to use lots of seasoning if you like it tasty.

Roll each piece of chicken in the egg or wet mixture and then in the flour batter mixture.  Then lay on a nonstick sprayed pan.

Put in oven to bake.  After 25 minutes flip the chicken and bake another 25 minutes or until done. (170 degree internal temp)

Enjoy

Cranberry Crush Fruit Salad

This a wonderful alternative to canned cranberries with the can ring indent.  Everybody will want this recipe because it is such a fresh tasting fruit salad.

Cranberry Crush Fruit Salad

Crush whole fresh cranberries and a cup of marshmallows in a food processor.  When they are blended up add 1 1/2 Cup of sugar or more if needed to make tart cranberries sweet and blend a little more.  Pour crushed cranberries in a bowl and add diced up apples, oranges and a can of crushed pineapple minus the juice.  I save the juice for sangria.

Mix all fruit and some slivered almonds or walnuts.  Chill for 30 minutes before serving.

Enjoy this wonderful Cranberry Crush Fruit Salad that is full of vitamins.

Cheesy Leftover Mashed Potato Muffins

This is my Pinterest Pluck for the week.  I will take a recipe a week and try it to see if it is as good as it sounds and looks on Pinterest.  So here goes:  Cheesy Leftover Mashed Potato Muffins.  The Pinterest link for original recipe is below.

Pinterst cheesy mash potato muffins

I mixed up the mashed potatoes with egg, chives and cheddar cheese.  Put them in a muffin tin and baked for 40 minutes.

When I took them out of the muffin tin they all stuck and came out in pieces.  I sprayed them with cooking spray but maybe should have used more.  I didn't think they were very flavorful.  I think they were good but I would have added some more seasoning.  Maybe adding some hot sauce, sriracha, or some wasabi mustard would have given it some more flavor.  I decided to take my leftover mash potatoes and fry them like pancakes.  The recipe is to follow.
