Goulash

This is the Flashback dinner recipe.

This goulash recipe that my mom made on a regular basis was among many hotdish recipes she had in her recipe box and I still love it today.  Beef goulash  is one of the best comfort foods of the past and is also known as beef tomato hotdish up north. You can make old fashioned goulash a variety of ways so don’t worry about following the recipe just sub out what you don’t have in the cupboard for what you do.Cooking is not a science so don’t worry about measurements either. Here is the recipe.

Goulash

I started the easy goulash recipe with a pound of ground beef and fried it up with some peppers, onions and celery. You can add or omit any of the veggies above.

I added some frozen meatballs to the goulash that I had in the freezer too and cut them in half. When that was warm I added some spaghetti sauce, can or two of tomatoes. Now you can use whatever red sause or tomatoes. Tomatoe paste, puree or any other will work.  Spaghetti sauce works well in this goulash recipe because it has lots of seasoning in it already. If you would like to make sauce from scratch I have added a link to a recipe for that below. You can add salt, pepper, garlic, parsley, oregano, basil or just some Italian seasoning. You can add any other seasoning you like.Let it simmer for a bit so the flavors can get happy together.

Boil some noodles for the hotdish like goulash. The choice is up to you so whatever you have you can use.I used egg noodles but the original goulash my mom made called for plain macaroni.

When they are done add them to the sauce and toss.Warm the old fashioned goulash and it is ready to serve.Add some cheese on top when you dish it up. This is wonderful old fashioned beef goulash.

Mashed Potatoes

Mashed Potatoes loaded with all kind of goodness. They can be made with any or all of the ingredients below. You can pick which ones you like best. These mashed potatoes are a devine comfort food to enjoy any time of the year.

Mashed Potatoes

Start this mashed potato recipe with cooking potatoes by boiling them in salted water until tender. I used baby red potatoes and left the skins on but you can prepare them for boiling any way you want. Once they are cooked so that you can poke a fork in them without resistance you can rinse the water off them. I mash them and add 1 to 2 sticks of butter which are added for the goodness, one 8 once package of cream cheese, some fresh garlic (garlic seasoning will work too),and 1 or 2 big scoops of sour cream any flavor you like ( I used onion and chive sour cream). You can add some cheese if you want too. I never said this mashed potato recipe was on your diet.

Once the mashed potatoes are all mixed and mashed up then add some salt, pepper, chives, parsley, Italian seasonings. This is where you can add any other seasoning you like to this mashed potato recipe. Make sure to taste and add more of anything above it it seems to plain because potatoes can absorb alot of seasoning.

Serve hot.

Bloodymary Chili

Chili is a wonderful recipe for cool fall days. It is easy and can be made in the crockpot so that you can still do all your fall activities and there is plenty of leftovers for the entire week.

Bloodymary Chili

I start the Bloodymary Chili with sauté onions, mushrooms, peppers, celery and beans, with some ground beef. The meat part of this chili is up to you.  You can add anything from ground turkey or chicken, beef shredded or ground omit it all together.

Add a 2 Cups of Bloodymary tomato mix, a can or two of diced tomatoes with the juice to the chili. Add a few tablespoons of some pickle and olive juice to the mix.  You can add a package of chili seasoning if you have one or just some chili powder, onion powder, celery salt, hot sauce or tabasco, and garlic.

I then add to the Bloodymary Chili beans and they can be whatever you like and have on hand.I used black beans and kidney beans.I then added corn or another other ingredient that I might have missed. Leave the spicy chili on low for a few hours. During this time if it seems to dry you can add some more tomato juice or another can of tomatoes until it is at the Chili is the consistency you like.

Serve the Chili hot with cornbread, olives, cheese, sour cream and beef sticks.  The cornbread recipe is below.

Pre heat oven 350 Degrees

Roll out dough for the bottom of the Pie.  Cut it to within a ½ inch from the pie plate rim.  Set aside.

Put sliced apples, sugar, brown sugar, cinnamon, and cornstarch together.  Stir well to incorporate the sugar with all the fruit.

Pour into pie pan and roll out second crust to cover pie.  Cut to a ½ inch of the pie plate rim.  Squeeze the ends together tight to hold all the juice inside while it is cooking.

Jambalaya

Sausage Jambalaya is a wonderful dinner for those cold nights.  It is easy to make and I usually start with a box of Jambalaya mix and add a few other ingredients.Only takes about 30 minutes to be table ready.

Jambalaya

I start the Jambalaya recipe with the Jambalaya box mix because it is easier than trying to season to get it spicy so I let them do the hard work. I pour in the Jambalaya mix with a couple cups of water and let that start boiling.I will cut up the sausage into bit size pieces and put it into the mix.You can use any combination of sausage or sea food in the Jambalaya recipe you would like.I will usually pick precooked sausage or cook it before I add it to the pot.I then add a can of diced tomatoes, green chilies, black beans and some diced peppers to the Jambalaya recipe.  If this sounds too spicy leave out the green chilies or if it needs more add some jalapenos.

After the Jambalaya comes to a boil you need to simmer the sausage Jambalaya for about 15 minutes or until the rice is done.

Serve with cornbread or crackers.

Enjoy

Lasagna

This is a very easy Lasagna recipe and there will leftovers for all week. The history of lasagna is a confusing and much debated one. There are a few theories as to its origins. Some believe that the word ‘lasagna’ comes from the Greek word ‘lasagnum’ which is the word for the dish that is pasta based.

More history on Lasagna

Lasagna

Start the Lasagna by cooking the ground beef with onions, I cut up fresh spinach but you can skip that if you don't like spinach, and green peppers

To assemble the Lasagna recipe put sauce in the bottom of a pan. Cover bottom with uncooked Lasagna noodles. I know but you don't have to cook the noodles which makes it an easy recipe.

Next layer of the Lasagna recipe is a ground beef mixture, cottage cheese, and ricotta cheese.

Next layer of the lasagna recipe is mozzarella cheese and more noodles.

Sauce and more ground beef, cottage cheese and ricotta cheese.

Mozzarella and more sauce.

The last layer of Lasagna is noodles and sauce on top. Put about 1 cup of water around the outside of the lasagna next to the pan so the noodles can cook.

Cheese on the top and cover. Bake the Lasagna on 350º for 45 miminutes covered and 15 minutes uncovered.

Enjoy this wonderful Lasagna recipe.
