Sausage Breakfast Burrito


This is a very easy breakfast that can be made ahead of time and just cooked when you are ready to eat.  A great holiday breakfast burrito recipe for family and friends.

Start by filling a pan with all kinds of breakfast foods.  I will start with sausage, onion, garlic, mushrooms and green peppers.  I cook the sausage until it is done and cut into pieces.  I then add to the cooked sausage  onion, garlic, green peppers, and mushrooms to the pan and cook until they are all done. 

 


When sausage and vegetables are cooked I add about 5 or 6 beaten eggs to the pan and continue to cook until all the eggs are cooked.  I will top with cheese and let cool.

 


 

Take a large tortilla and scoop some of the sausage vegetable mixture in it and top with more cheese.  Fold up and bake in the oven at 350 degrees for about 15 minutes or until the tortilla is hard and the ingredients are hot.  You can cook it on the stove in a pan until the burrito gets hard.

 


When the breakfast burrito is done you can top it with anything from hot sauce to sour cream.  This is your chance to be creative.  They can be refrigerated for a week or if you freeze it will stay for about 6 months.

Meatballs

















Meatballs

This meatball recipe is so easy enough to be a holiday appetizer and tasty you will never buy pre made meatballs again. They can be kept for a week in the refrigerator and up to a year in the freezer.




For the meatballs I put any amount of ground beef in a bowl to make the meatballs. I used 3 pounds because I will separate the beef to cover a few meals. If I am going to cook one meal I will usually cook 2 or 3 other things at the same time. This saves me time during the week of preparing other dinners.

Next I add everything from veggies to seasoning. I put in mine a bag of onion soup mix, some garlic, ½ cup per pound of any mixture of diced onion, green and yellow pepper, a jalapeno, some Italian seasoning, salt and pepper. Mix these ingredients well with your hands yes I said your hands. Take off your bling and get your fingers in there and mix everything up good. It can be very liberating. Just remember to wash your hands good before you touch anything else.



At this point I made 4 hamburger patties and wrapped them until later in the week and I fried up a little less than a pound for another meal that week.


With the remainder of ground beef I added 2 eggs and some type of crumbs. I took Friday nights toasted baguettes and put them in the oven to toast them even more. When they were done I put them in my food processor to make my own bread crumbs. You can use crackers, chips, pretzels, oatmeal or whatever you have in the cupboard. Just grind them up into small crumbs.

I then will roll my meatballs. They can be as big or small you would like.  I use smaller ones for appetizers meatballs I will make them big. Cook them on 350 degrees for 10 minutes then I will flip them or they will burn and cook for another 10 or 15 minutes or until the internal temperature is 160 or above. If they are small meatballs they may not take as long to cook. Keep an eye on them to not overcook them.




    


I feel a meat thermometer is a must because you don’t want to over or under cook you meat products.

You can make as many meatballs as you want for future meals because they freeze really well. If you freeze them put them on a plate or baking sheet in freezer until they are frozen then put them in a freezer bag. That way they won’t stick together and you can just use one or two meatballs at a time. Meatballs are good 6 months to a 1 year.






Some will stay in the refrigerator after being cooked until Spaghetti night then I will just add them to some sauce. That recipe is to follow. Don't forget the infamous meatball sub.

Chicken Marsala


This is my take on the famous meal Chicken Marsala.  It was wonderful and very easy to put together.

To make Chicken Marsala put 2-4 pounds of chicken breast into a Dutch oven.   I topped it with salt, pepper, chopped onion and garlic.  Then put a can of tomatoes with Italian seasoning (with garlic, basil or green chilies), cup of sweet red or white wine, and 1 cup of sliced mushrooms on top of the chicken.  I then sprinkled on top of everything paprika, chili pepper powder and some more Italian seasoning.  You can add any other seasonings you like.

 

Let it cook on 325 degrees for a few hours or until it is 165 degrees internally.   You can add cheese to this wonderful chicken dinner to make it exceptional.  Let cool and serve over rice or noodles.  Chicken Marsala is great reheated the next day.

Beer Cheese Soup

This is a wonderful beer cheese soup recipe that will warm you up and give you the extra protein you need to get through the winter. If you don't want to add the beer you can just add a little more chicken broth to equal that amount of beer you would normally add. Either way this soup is wonderful. I added some broccoli with it to add some veggies.  I paired it with some cornbread. Thais recipe is in this blog if you want to look that up too.



Beer Cheese Soup




Sauté onion and garlic together for a few minutes then add 1 cup celery and carrots to the pan and cook until soft.Add 1tps hot pepper sauce, ½ tsp cayenne, ½ tsp salt and pepper or more if you like any of these ingredients.











Add 3 cups of chicken broth, and 2 cups of beer, 1/3 cup butter and stir to combine.Add slowly while stirring 1/3 cup flour to the beer cheese soup recipe.  I added some chopped broccoli to it if for extra flavor.












Add 4 cups of milk or half and half to the beer cheese soup recipe.Stir until mixed well.Add 6 cups of shredded cheddar cheese or more if you like it creamy.Then add 1/3 cup of cream cheese and 1/3 cup of sour cream.











Last thing to add to this beer cheese soup is 2 TBS of Worcestershire Sauce, 1 TBS Dijon mustard, and 1 tsp dry mustard.









Simmer the beer cheese soup for 10 minutes and serve.I made cornbread to go with the recipe that is in this blog a couple of days ago.

Egg Muffins


 
This is a wonderful thing to make and take on the go.  It is full of protein and easy to eat on the run. 

 


 Egg Muffins
 
 
 

First start by pre heating the oven to 350 degrees.  Spray a muffin pan with non-stick like Pam. 

 

I chopped up a bunch of veggies and some sausage links or ham either will be wonderful.  You can add whatever you want but don’t forget to season with some salt, pepper and anything else you like.  I added some chopped peppers, onion, potatoes, Jalapeno peppers and mushrooms. 

 


 

Fill each muffin tin with veggies and meat until half full then top with some cheese.   Beat together 8 to 12 eggs and pour into each muffin space until it is almost to the top. 

 










Bake for about 20-30 minutes or until you can insert a toothpick and it comes out clean.  Let cool and enjoy.  They can be refrigerated for up to a week and warmed in the oven or microwave.

Mickey's Diner St. Paul Minnesota

We went to lunch at Mickey’s Dining Car in St. Paul Minnesota which just down the street from where I work. We were seated right away at the counter which is here I love to sit to watch them prepare the meals. Below is some history on Mickey's.




Mickey's Dining Car was Placed on the National Register of Historic Places in 1983




Mickey’s Diner in St. Paul Minnesota was designed to resemble the railroad dining cars of the period. It is unique in that it is one of the first diners to be built in the Art Deco style. Mickey’s Dining Car was manufactured in New Jersey and shipped by rail on a flat bed to its present location.




I ordered the One Eye Jack at Mickey's Diner which was a toasted ham, cheese, and egg sandwich. I ordered it with fries instead of hash browns.
The fries were crunchy but didn’t drip of oil like some fries. The sandwich came with a large piece of ham, two slices of cheese grilled with a fried egg on top. The sandwich had a wonderful flavor and was well worth the $9 I paid for it.




My friend ordered the Mickey's Diner sausage omelet with hash browns and toast. I noticed they put the eggs in a stainless steal malt shop cup and mixed them with an ice cream mixer for 3 minutes. It must by why they are so fluffy. They put the eggs into a small pan and flip it once, load it with sausage and fold it over.
It was a big fat omelet stuffed with big chunks of sausage. She had way too much food for one person and maybe two people. Here meal was about the same $11.


The Mickey's Diner cook was very funny and made us all laugh more than once. It was hypnotizing to watch him cook all of the orders at one time keeping everything straight. It is a wonder that the staff doesn’t get hurt working together because of the close corners they share while performing their jobs.


Mickey’s Diner is a definite must do if you are in the town of St. Paul Minnesota.

Tuna Fish Cakes

Tuna Fish Cakes



These Tuna Fish Cakes turned out amazing. This tuna recipe was inspired by my brother’s suggestion to come up with a recipe to use all those cans of tuna fish in the pantry. So this tuna recipe is that way but it may be a reason to go buy more tuna fish.



Tuna Fish Cakes


I started the tuna fish cake recipe with two cans of tuna fish in a large bowl but it is fine to just half the recipe for just one.




I diced up very small celery, yellow pepper, onion, and one whole jalapeno (about 1/2 cup total). Add this to the tuna and stir. Next add 2 eggs, sriracha sauce to taste (leave it out if you don't like hot and spicy), finely shredded cheese (whatever amount you want), whatever seasoning you like and then bread crumbs or some other crumble mixture. (crackers, pretzels, bread crumbs, or crumbled potato chips) I used seasoned stuffing that I finely ground in the food processor. Use enough to make the patties stick together. They will be kind of crumbly but squeeze them together good.




Heat a pan with a little oil or nonstick spray. Drop in the tuna fish cake patties when the pan is hot and cook on that side a few minutes. You can make then whatever size you want, small for an appetizer or large for dinner. Try not play with the tuna fish cakes too much because they will fall apart. Flip very carefully and cook on the other side a few minutes. Shut off stove and sprinkle with cheese and let melt. I used mozzarella but you can use whatever you like or have on hand.



When the cheese is melted on the tuna fish cakes they are ready to eat.Very quick meal with a very inexpensive high protein tuna recipe product.

Chicken Fried Steak

Chicken Fried Steak is a great Sunday dinner.  Chicken fried steak is crunchy and has a wonderful flavor. The recipe is easy and I baked it instead of frying it which makes it a little healthier.



Chicken Fried Steak



Pre Heat oven to 350 degrees.


I started the chicken fried steak by cutting up a sirloin round steak into portions about the size of you palm. I then took a mallet and pounded out the steaks on both sides. I seasoned them and set them aside until I was ready to coat them.


I used one bowl for an egg wash which had in it 2 eggs, Worcestershire sauce, salt, pepper, and hot sauce.




The second bowl had flour, corn flakes, Cajun seasoning, chipotle seasoning, garlic powder, paprika, Italian seasoning, sriracha seasoning, and salt. A few shakes of each will work.




I took the steak and put it into the egg wash then in the flour corn flake mixture until it is coated completely. I sprayed the bottom of a glass bake dish with nonstick spray and put the steaks in the dish along with a few pats of butter around the steaks.
The chicken fried steak went into the oven for 35-45 minutes. The inner temperature of the steak should be 140 – 160 degrees.






Gravy


While the chicken fried steaks are cooking I made up some gravy for them. I took some sliced mushrooms, a garlic clove, sliced onions, Worcestershire sauce, steak sauce, and butter. Cooked them on low heat until the onion is translucent.
I then added 2 tsp at a time of Wondra flour and stirred until it absorbed all the butter and juice. I then put in ½ cup of half and half. Stir that until it is smooth. When that comes to a boil I turned down and let cook for a few minutes. After a few minutes it will start to thicken and if not I added another spoonful until it was as thick as I needed. If it is too thick you will need to add some more half and half.





Let the chicken fried steak cool for a few minutes before serving when it comes out of the oven. Top with Gravy and enjoy.

Pizza Mac and Cheese

This recipe was inspired because I needed to use up some prepared bags of Mac and Cheese. It seemed to boring so I did what I always to and spiced it up.

I started by boiling a prepared bag of  Mac and Cheese per the package instructions.  If you want you can just start with Macaroni because there is enough cheese to not miss the powder cheese packet.



Then I added to the Mac and Cheese about 2oz of cream cheese, scoop of sour cream, and some shredded mozzarella and lots of cheddar cheese ( any amount is fine). This is where I will taste it to make sure it is spicy because I love spicy.

You can add all kinds of ingredient. Pepperoni, sausage, finely chopped onion, red peppers, and mushrooms to it.   You can add an pizza seasoning you would like.  For example:  red pepper flakes, italian seasoning and celery salt.  You can add some pizza sauce if you would like that but it is not a must.









I put the cheese in a pan and topped with of course more cheese, whatever flavor you like, some seasoned bread or cracker crumbs of your choice and a few pats of butter on top.


Bake the pizza mac and cheese at 350 degrees for about 30 minutes or until crumbs are toasted and the center is hot.

Chicken Fettuccine Alfredo

This is a wonderful comfort food meal that is great when the weather gets cold.  The homemade fettuccine recipe was posted yesterday so if you want to make it from scratch check this blog.


Chicken Fettuccine Alfredo

 

Ingredients:

6 ounces of Homemade or box Fettuccine

1 lb of Chicken breast

 

Alfredo Sauce:

Pint of heavy cream

1 stick of butter

¼ cup fine chopped onions.

¼ cup mushrooms

3 TBS Italian Seasoning

1 TBS Garlic Powder

1 TBS Pepper

Chopped parsley for garnish

1 Cup shredded Parmesan cheese

1 Cup shredded Romano cheese

 

Sauté chicken in a pan until cooked internal to 170 for the Chicken Fettuccine Alfredo.  Cut into small pieces after it is cooled and set aside.

To prepare Alfredo sauce:

Sauté the mushrooms and onions.  Heat heavy cream over low-medium heat in a deep sauté pan. Add butter and let it melt. Sprinkle in cheese and stir to incorporate all but a few onces of cheese. Stir in sautéed mushrooms and onions.  Season with garlic, Italian seasoning black pepper.

 



In a large stockpot, cook fettuccine in plenty of boiling salted water for 3 minutes. Drain the Fettuccine and add it to the sauté pan of sauce, gently toss the noodles to coat in the Alfredo sauce. Transfer Chicken Fettuccine Alfredo to a warm serving bowl. Top with more grated cheese and chopped parsley.

Homemade Fettuccine

I decide to try and make homemade pasta and ended up with making Fettuccine. It was work but well worth it and the recipe is easy. The work was rolling out the dough. I found a trick to cutting it so it was easier than I had thought. It tasted really fresh and we used it to make two meals that week. I will post both of them this week.



Homemade Fettuccine










I started making the homemade Fettuccinee by taking 2 cups of flour and making a well with it. I put 3 eggs into the well along with ½ tsp of Salt and stirred it by hand.






When it was mixed I added ½ tsp of Olive oil to the fettuccine recipe, covered it with plastic and put it in the refrigerator for atleast 4 hours.

The fettuccine dough sat for 4 hours I took it out and split it in half so it was easier to roll out.
Once rolled out the fettuccine dough very thin then I rolled up the dough.

I cut the fetuccinne into small pieces off the end and unraveled them. Behold there was the Homemade Fettuccine.



I then boiled Fettuccine for about 5 minutes. You don't want to cook it too much because if you add sauce it will continue to cook and you don't want it mushy.

I drained the Homemade Fettuccine and put it in the refrigerator for the next day when I made an Alfredo sauce and red sauce.
