Banana Nut Bread

I woke this morning to many over ripe bananas so decide to make banana bread from my mothers recipe.  Yes it is hand written on the first page in pencil of her old 1956 Betty Crocker cookbook.






Banana Nut Bread

1 1/2 cup sugar
1/2 cup butter
2eggs
4 TBS milk
1 tsp vanilla
2Cups flour
1tsp baking powder
1 tsp baking soda
1 tsp salt
1 cup nuts
3 Very ripe Bananas mashed




Cream wet items and dry together then add them to each other.
This will make two loaves.  Split between two loaf pans sprayed with non stick spray.





Bake 350° for 45 minutes or when toothpick is inserted and comes out clean.

Cheesy Potatoes


This is a wonderful cheesy potato recipe for any holiday or cold night home.   This was my mother's favorite recipe and will be yours too.  They were truly amazing. The potato is a good source of vitamin B6, Potassium, Copper and Vitamin C.  Check out the link below for more health benefits to eating Potatoes.

Cheesy Potatoes



Boil potatoes and when they are cool enough peel and cut up in little squares.  This can be done the day before for convenience.


Cut up butter and cheese to put on top.  Add plenty of salt, pepper, slice a stick of butter, a few scoups of sour cream, and half a package of cream cheese.  Stir and add cheese next.  A processed cheese works best.  (Velveta works well)





Bake on 350º for about 20 minutes then take out and stir. At this point you need to taste it to see if it needs more seasoning.   Add more cheese if needed.  Return to oven for another 20 minutes or until these cheesy potatoes are hot through.

Bacon Jam

This is my pinterest pluck for the week.  I took the Bacon Jam recipe from Pinterest and tried to make it.   It was very good but very rich.  I found it works best when used warmed up to coat another food or on something hot like buscuits.   Here is the original link to the pinterest Bacon Jam so you can try it.

I followed the recipe from the link and the pictures are below. 

I cooked the bacon until it was almost done.  I added some chopped onion and cooked until the onion was cooked.  I then added the ingredients they said to add and cooked on low for a few hours stirring every 10 minutes.  It had to be watched because I think amount of brown sugar in it would make it burn easy if not watched.










I am not a fan of it right out of the refrigerator cold but warmed up on toast or biscuits it is wonderful.



We coated chicken wings with the bacon jam and it was amazing.



We seasoned chicken wings and put them in the oven on 350° for about 60 minutes.  I took the wings out and coated them with Bacon Jam and put them back in the oven for about 20 minutes or until the reach 170° internally.





Amazing.  The were sticky and sweet and had a wonderful bacon flavor.

Split Ham & Pea Soup



This is a wonderful warm winter comfort soup. You can use ham or not. I used the ham bone I put in the freezer from Christmas dinner. You can cook it on the stove or in the crock pot either way will produce a wonderful soup.

I put the ham bone in some water and started boiling it. I let it boil for at least a few hours with whatever amounts of carrots, onion and celery you would like.  I removed the bone so I could pull the ham off it to put in the soup. I had to let it cool and added about a cup of split peas to the 5 quart pot of water along with a few cubes of chicken bouillon. 

 


 






The peas boiled for a about an hour when I put the ham I pulled off the bone back into the pot.  I added some frozen peas and seasoning.  Anything will work.  I let it cook for a few more hours and used an emulsion blender to break down the veggies.

 

 




I will taste along the way and if it seems too plain you can add more chicken bouillon or extra seasoning.  

 




Serve with crackers or bread.  Yummy on cold nights and snowy weekends.

Pecan Pie

Pecan pie is wonderfully sweet pie and everyone loves it.


Pecan Pie



Mix 3 eggs and 2/3 cup of sugar.


  Add 1/2 tsp salt, 1/3 cup butter, and 1cup light or dark Karol  syrup.






Mix together than add 2cups pecan halves.




Put in unbaked pie crust.






Bake the pecan pie at 360º for 40-50 minutes or until done in the middle.
One way to test if the pecan pie is done is to insert a toothpick and if it comes out clean the pie is done.

Peanut Butter French Toast

This is a wonderful weekend breakfast even the pickiest eaters will love.  This french toast recipe will be a favorite forever.




History of French Toast











Start by Pre heat the oven to 350 . Put butter, peanut butter, and cinnamon between two slices of bread. You can add jelly and bananas or omit the cinnamon if you like. Once the sandwiches are made you set them aside. Wisk together 2-4 eggs (depending on amount number of french toast) with 1/4 cup of milk.





Take the sandwiches and dunk them in the egg mixture until both sides are coated.  Let excess drip off and put on well greased sheet to put in the over. 





Put in the oven for about 30 minutes depending on oven.  Flip them after 15 minutes have gone by and return to the oven for another 15 minutes.  Serve with butter and syrup.  This french toast will make you want to have it every morning or night.

3 Dollar meals

This is a $3 meal plus there is extra for a few lunches.  Hope you enjoy and all recipes can be altered to include your favorite foods.



I started with boiling some water to cook some pasta. I picked penne pasta and cooked it until done. I added some broccoli, a can of $1 Broccoli Alfredo soup and seasoning.  When it was war through I added some cheddar cheese but any kind will work.  There was plenty to offer us lunch possibilites for the week.




I made the second with macaroni noodles. Cook them until they were done and added a $1 can of streak and vegetable soup. I added seasoning and heated it through. When I was ready to serve I added some parmesan cheese on top.  This recipe can be doubled if you are feeding lots of people or use just one can because we had let overs for a few lunches for the week.

Now the one that you can decide on you own. 

1.  Pasta or rice of you choice.  A few cups will be fine.
2.  Soup or sause of you choice.
3.  Veggies or extra meat of you choice.
4.  Seasoning and cheest on top when it is done.

Now you can made a $3 meal anytime.
