Tuna Crunch wrap


Tuna crunch wrap some one of my favorite dishes that are mostly gluten free and I will share those from time to time.  Here is one of my favorites.

 

Tuna Crunch wrap

 

 





Pre heat the oven to 350

 

I started to sauté some peppers, carrots and cabbage.   Season well and set aside. 


I used gluten free tortillas for the wraps.  I mixed up some tuna with some sriracha sauce and some gluten free mayo. 

 

 
I then took the tortilla and laid them out and put some of the tuna mixture, some vegetables, and cheese.

 




I wrap them so the seam is on the bottom and put them in the oven for about 20 minutes.

 




Tuna Crunch wraps are a great hot sandwich.  Add whatever topping you like.  I added some verda sauce.  The next day I took one for lunch and it was still very good.

Potato Nachos


Potato Nachos is such a simple yet tasteful recipe. This is a great recipe for date night and I think the kids would love it too as well.  Hope you enjoy as much as I did.



Potato Nachos

 





 

 

Pre heat oven to 350


You start by cooking two medium potatoes.  I had leftovers from some baked potatoes.  I sliced them up and layered them on a greased pan.  To build the potato nachos I seasoned the slices potatoes with some salt pepper and paprika.  I put some green and red peppers, onions, and mushrooms in on top of the potatoes. 

You can add any or all of these ingredients above.  If you love something special on your nachos that I have not added go ahead and add that to the mix.
 





I layered some pepperoni but you can add any kind of meat you desire.

 





Cheese on top of that and pop the potato nachos into the oven for about 20 minutes or until everything is hot and melted.  The amounts of cheese and peperoni are up to you so go wild if you want.

 





 

Top with sour cream and the sauce of your choice.  Potato nachos are a wonderful next day lunch because there is always some left over.

Chocolate Toffee

This is an easy recipe to make and you probably have most of the ingredients in you cupboard.





Saltine chocolate toffee





I didn't make a full batch so the pictures are for only half the recipe.

Lay 40 saltine crackers in a pan lines with tin foil. Over medium heat melt 1 cup of butter with 3/4 cup brown sugar. Cook for 1-2 minutes or until thick. Pour over crackers and bake on 350° for 8-10 minutes.










Sprinkle 2cups of chocolate chips over baked crackers. Allow chips to melt then spread evenly. Sprinkle with toffee bits.





Refrigerate about 1 hour. Break apart and store in airtight container.  It is truly delicious.

Caramel Candy Bar Cake



This is a very sweet treat.  It is easy to make and everyone will love it.  It is heavenly.

I start with a cake mix.  Prepare using box directions.  You can make it from scratch but a box cake mix will be fine.  I did put in some chocolate chips in with the batter.  Bake per instructions and let cool.

 

 


 

 

I then poured a small jar of caramel sauce on top of the cooled cake.  


I poured some crushed nuts on top of the caramel layer.  You can add as much as you would like.  

I added some candy coated pieces in with my chopped nuts.  You can put chocolate or butterscotch chips on top with the nuts if you like.

 

I spread a container of Whip cream on top of the caramel and nut layer. 

I then crushed two chocolate toffee bars into pieces and sprinkled that on top of the whip cream layer.  You can use whatever candy bars you like in place of or added to the toffee bars.

Keep refrigerated until ready to serve.

Cornbread


I love to start with some pre made box items  like a cornbread mix and make a home cooked meal out of it. We are all very busy and I don’t want to spend too much time in the kitchen but still want to prepare and eat great food. I paired this with chilli recipe to follow.

I pour on box of cornbread mix in a bowl. I will follow the box instructions but to that I will add any or all of the following items: chopped green chilies, jalapenos, peppers of any color, onion, black beans, cheese of any kind and any other Mexican item you want to add. Now you can add about 1/3 of a cup of each item above. You could add some seasoning now and anything you like is fine. I added some Tai Pepper powder. If it seems too wet when you are done adding extra things you can add a little flour.




Mix ingredients and put into a nonstick sprayed pan. I used a 9 x 9 for mine.


Bake the cornbread on 350 for about 40 to 60 minutes or until it is not tacky when poked in the center with a toothpick.





This spice cornbread is great when served with Chili. That recipe is to follow.

Chicken Fried Rice

This great chicken fried rice recipe is easy to make and everyone will love it. Great to have left overs because it taste better the next day.




Chicken Fried Rice





In a large frying pan cook on medium heat onion and celery with the boneless, skinless chicken of your choice. I use chicken thighs or you could use chicken breast or tenders. Use any amount of onion and celery that you like or omit if you don’t like them.



Make rice (minute or long grain) according to package directions. When it is finished you put it into a large frying pan and start to recook the rice.




Add the chicken and veggies to the pan of the fried rice and flip or stir until hot. Add chicken stock so it doesn’t get too dry before it cooks through.



 


Add a bag of frozen or a can of mix vegetables, mushrooms and seasoning to the chicken fried rice.

Some seasons you could add are ginger, parsley, tai, and soy or chili sauce.


Taste the chicken fried rice every 5 minutes to make sure it is seasoned to your liking.

Beef and Cabbage Roll ups


 Cabbage is very healthy so this is the best recipe to get in your vitamins and eat well.
This is a wonderful recipe for the cold winter nights.  This recipe makes enough to serve 6.
 
 
 


Beef and Cabbage Roll Ups.
 

 







Preheat oven at 370 degrees F.
 


Mix thawed hamburger, onions, peppers, mushrooms and onion soup mix.    Then put in some Sriracha Sauce, minced garlic, a couple of shakes of Worcestershire sauce, some pepper and Italian seasoning.  You can decide how much of the above ingredients you want to add depending on your preference.  Red pepper flakes can be added it you are looking for spicy.





Pour some red sauce in bottom of a 9 x 13 baking dish, you will need about 1 25 oz jar of red sauce

 Cook in microwave the cabbage leaves for 4 minutes on high.

Mix all ingredients and roll into 6 balls the size of a baseball. 







I had some leftover spanish rice which I added to the roll ups.


Wrap them inside a cabbage leaf and fold together the seams. 




 When all rolls are in the baking dish, sprinkle with some more salt and pepper. Pour remainder of red sauce over the cabbage rolls and bake for 60 minutes.




 

Check every 30 minutes and baste with red sauce.   In an hour or when the cabbage is cooked cover the cabbage rolls with mozzarella cheese and let cool. Serve immediately.
