Sweet & Spicy Barbecue Sauce


This BBQ sauce is something that has been passed down from my mother.  She would make it and everyone loved it.  It is a weird combination but the taste is out of this world.  It is very sweet but taste awesome on chicken.





Sweet & Spicy Barbecue Sauce

 


 

2 -12once Bottles of Chili Sauce

14once can of whole Cranberries

½ Cup Ketchup

½ Cup Sauerkraut

¼ Cup Brown Sugar

 

 

Combine all ingredients and simmer for 2-4 hours.  I put it in the oven on 300 degrees for the first hour and 275 degrees for the remaining hours.

Let cool and put into containers for future use.  Will last in the refrigerator for up to 2 weeks.

Chicken Macaroni Cheese with Granola Crunch Topping

This recipe was designed for a granola challenge I am part of this month.  It is unique and I think the kids will love it because it is sweet and there is chocolate in the granola I used.





Chicken Macaroni Cheese with Granola Crunch Topping

 

 

 

 

Sauté chicken with desired seasons until cooked to 165 degrees internally.   I used onions, peppers, garlic and olive oil for the pan.   Usually some italian, chili and paprika seasoning.  Cut into bite size pieces and put aside.

 



 

Prepare 3 Cups Macaroni following bag or box instructions.  Add to the macaroni when it is cooked 4 ounces of cream cheese, 1 cup of shredded cheddar and 6 ounces of processed cheese.  Cook on low heat until all the cheeses are melted and mixed together.  You can season with whatever you would like before adding to the bake safe dish.

 



 

Take an oven safe dish and pour the macaroni and cheese in the bottom, top with spinach leaves, chicken chunks and shredded cheese. 

 


 
Sprinkle  1 Cup of Golden Girl Granola with chocolate over the top. 

 



Put 6 pats of butter on top of the granola. 

 Bake the granola mac and cheese on 350 degrees for 30 minutes.

Pineapple Angel Food Cake


This Angel Food Cake with Pineapple is as easy as 1, 2, 3 and taste out of this world.  It is so light and sweet just in time for summer.

Take a box of angel food cake mix and pour it into a bowl.  Add one 20 ounce can of crushed pineapple. 





Mix the pineapple angel food cake mix well and put into an ungreased tube pan and bake for 35- 45 minutes until it is golden brown and you can insert a knife and it comes out of the angel food cake clean.

 


 

Let the pineapple angel food cake cool 10 minutes and then flip over onto a cake plate.  Sprinkle with powder sugar.  Cover remaining angel food cake after completely cooled.

Strawberry Rhubarb Pie


We had extra Rhubarb this spring so we decided to make a pie and pair it with fresh strawberries.  It was wonderful and we shared it with many family and friends which is the real reason for cooking.  Not to just eat but to build and nurture relationships.






 
Strawberry Rhubarb Pie

 

Crust:
2 ½ Cups all-purpose flour
1 Cup cold Butter cut into 10 slice
1 tsp salt
2 tsp Sugar
6-10 TBS Ice water

 Strawberry Rhubarb Pie Filling:

2 cups chopped Rhubarb
2 Cups Sliced strawberries
1 ½ Cup Sugar
¼ cup flour 

Directions:

 Pre heat oven to 350 degrees.

Put Flour, salt and sugar in a food processor and mix together.  Add the butter and pulse until it is crumbly.  Add ice water one TBS at a time until the dough holds together.  Divide it to two equal parts, cover with plastic and refrigerate for 30 minutes.

Roll out dough for the bottom of the Pie.  Cut it to within a ½ inch from the pie plate rim.  Set aside.

Put diced rhubarb, sliced strawberries, sugar and flour together.  Stir well to incorporate the sugar with all the fruit.

 










 


 Pour into pie pan and roll out second crust to cover pie.  Cut to a ½ inch of the pie plate rim.  Squeeze the ends together tight to hold all the juice inside while it is cooking.

Put a few slits in the top of this strawberry Rhubarb Pie for steam to escape and brush crust end with egg wash.

 

 

Bake the Strawberry Rhubarb Pie on 350 degrees for about 40 minutes until it is golden brown.  Sprinkle with sugar when it comes out of the oven. 

 
 

Let cool and serve.

Hot Dog Grilled Cheese Curd Sandwich

This is a wonderful grilled cheese sandwich.  Easy to make.  Start to finish in less than 10 minutes.





Hot Dog Grilled Cheese Curd Sandwich





Start by buttering 4 slices of any bread of your choice.  Slice 3 hot dogs cut in half and warmed.



Put 2 slices of buttered bread in a hot frying pan.  Arrange 1 1/2 sliced hot dogs on a piece of bread.  Sprinkle hot sauce on dogs and arrange cheese curds cut into small pieces and top with second piece of bread.





You can put some chilli on top of this hot dog grilled cheese curd sandwich with or instead of the hot sauce.




Cook on medium heat until bread has toasted and cheese has melted.  Flip with care or all the hot dogs will fall out until the cheese is melted.




Slice the Hot Dog Grilled Cheese Curd Sandwich and Enjoy.

Chicken or Beef Spice Rub


This is a very spicy rub but it works well with chicken because chicken can be very bland.  Rub all over chicken and leave in the refrigerator to absorb the flavors for 30 minutes up to one day.  We applied the rub to some chicken thighs and left them overnight to soak up lots of flavor.  We grilled them the next night and they were very tasty.




 
Chicken or Beef Spice Rub

 



1 tsp Celery salt

1 tsp Onion Powder

1 tsp Asian seasoning

2 tsp Italian Seasoning

1 tsp Paprika

1 tsp of Cayenne

1 tsp garlic powder

1 tsp Tumeric

1 tsp Pepper

1 tsp Chipolte
 
1 tsp of finely chopped Rosemary
 

 
Mix all ingredients together and apply this to chicken or meat.
This amount is enough for 2 pounds.  Let soak in goodness for at least 30 minutes or up to overnight.



 
You can bake, grill or fry the chicken to 170 degrees internal temperature.

Fettuccine and Meatball Grilled Cheese Sandwich


The Fettuccine and Meatballs in Red sauce for my sandwich was made out of leftovers from the day before.   This sandwich can be made with speghetti and meatballs if that is what you have leftover.  I just took the leftovers and heated them up in a sauce pan with some more sauce and 1/2 cup  of Parmesan cheese.

Start by reheating the Fettuccine and meatballs from the last recipe.  I cut the meatballs into quarters so they stay on the sandwich easier.



Cut out of the French bread a sandwich size piece.  Butter and toast both of the insides of the bread in a fry pan. 

 
 
When it is finished place some shredded cheese on the bottom piece of the sandwich and put it on large oven safe baking dish.  Put some Provolone cheese on top of the shredded cheese then put the hot fettuccine and sauce mixture on top of  Provolone cheese.  On top of the Fettuccine mixture you evenly distribute the ½ cup of Mozzarella and the 2nd piece of Wisconsin Provolone on top of that.  

 Put the top piece of French bread on the sandwich and bake for about 15 minutes or until it looks toasted and the cheese is melted.

 

Let Cool and Enjoy

Fettuccine Alfredo

This was very easy to put together since we had made the noodles earlier this week. Should only take a few minutes to through together.

Sauce


Melt 1 stick of butter with 1 cup of half and half or heavy cream. Mix well and wait for the butter to melt. After everything is melted add 2 Cups of grated Parmesan.  Don't add salt or pepper until you taste it because the Parmesan is very salty.

 
Add noodles to sauce and toss.  Heat through and season as needed with salt and pepper after combined.  Shred Parmesan Cheese over the top and serve.

Homemade Fettuccine

I decide to try and make homemade pasta and ended up with making Fettuccine.  It was alot of work but the recipe is easy.  The work was rolling out the dough.  I found a trick to cutting it so it was easier than I had thought.  It tasted really fresh and we used it to make two meals that week.  I will post both of them this week.

I started making the homemade Fettuccinee by taking 2 cups of flour and making a well with it. I put 3 eggs into the well along with ½ tsp of Salt and stirred it by hand.






 
When it was mixed I added ½ tsp of Olive oil, covered it with plastic and put it in the refrigerator for atleast 4 hours. 
 

After it sat for 4 hours I took it out and split it in half so it was easier to roll out.
 
Once rolled out the fettuccine dough very thin then I rolled up the dough. 
 

I cut small pieces off the end and unraveled them.  Behold there was the Homemade Fettuccine.



 I then boiled Fettuccine for about 5 minutes.   You don't want to cook it too much because if you add sauce it will continue to cook and you don't want it mushy.
 
 

 
I drained the Homemade Fettuccine and put it in the refrigerator for the next day when I made an Alfredo sauce and red sauce.  That will be posted later this week.

Homemade Donuts


I decided this beautiful Sunday to try my hand at making homemade Donuts.  They turned out perfect, light and flavorful.  The donut and frosting recipes are below.  Have fun and enjoy.

 

 Homemade Donuts

 

 



Mix the dry ingredients together first 1 Cup Sifted flour, 1Tbs Baking powder, 1 Tbs cinnamon and ½ tsp salt. 

 



Mix wet ingredients 1 egg, ½ cup milk, 1 Tbs vanilla, and ¼ cup vegetable oil.  Once that is mixed add ½ cup sugar. 

 



 

Mix well and add to dry ingredients a little at a time while continuing to mix well.  Here is where you can add additional flavor if you want.  I added some peanut butter powder and some unsweetened cocoa powder to these homemade donuts.  You can pick what flavors you want but be careful adding too much liquid or dry ingredients because it will change the thickness.

 

Once the homemade donut batter is combined you can put the batter in a 1 gallon storage bag.  Cut the corner off and squeeze batter through hole into donut pan.  Fill the molds only half full.
Bake the homemade donut batter on 425 degrees for 7-9 minutes.

 Take donuts out of the oven and cool. 

 
 

 I used a old electric dual donut baking machine probably popular in the 70's or 80's.  It worked great and the donuts were superb. 
The donut machine needed to be plugged in for 10 minutes to warm it up.  I filled the bottom of the mold and closed the top and let it for 5 minutes.
 



 





 

 

Once cooled you can frost them the recipe is below.

 

 



 

Frosting

 
Mix ¼ stick of butter melted, 1 tps vanilla and ¼ cup powder sugar together.  If more moisture is needed you can add some milk to thin it out.  You can add flavors if you like.  I added just some vanilla extract but you can add anything you would like.  Melting some chocolate chips in it would have given it a rich chocolate flavor.

Beef Enchiladas

The Homemade Tortilla recipe was posted in the blog this week.  If homemade tortillas are too much for you substitute the store bought flour tortillas.  You can use small or large tortillas it is up to you.

Homemade Tortilla Recipe







Start by browning ground beef with diced peppers, onions, and jalapeno. You can substitute any kind of meat you want if you don’t want ground beef. Ground chicken or shredded beef or chicken will also be fine. Drain the beef and add a scoop of sour cream and 2 ounces of cream cheese. Heat until it is melted and gooey. I poured about ¼ cup of the enchilada sauce in with the meat sauce. Set aside until we build the enchiladas.

Open a large can of Enchilada sauce and shred about 3 cups of your choice of cheese. 

 
Put some enchilada sauce in the bottom of a baking dish, any size oven safe dish will work.  Size of the dish is dependent on how many you are cooking for and what you would like for leftovers.

 

Put some meat in the tortilla and top it with sauce and cheese.  Roll it up and set it in the baking dish fold side down.  Repeat with the rest of the tortillas. 

 



Pour the remaining enchilada sauce on top of the rolled up enchiladas.  Sprinkle with the remaining cheese and if you want to add more cheese pile it on.  Too much cheese is never a problem.

 



Bake on 350 degrees for about 45 minutes. 

 

Let cool for a few minutes before serving.
