Caramel Candy Bar Cake

This is a very sweet treat.  It is easy to make and everyone will love it.  It is heavenly.

Caramel Candy Bar Cake

I start with a cake mix.  Prepare using box directions.  You can make it from scratch but a box cake mix will be fine.  I did put in some chocolate chips in with the batter.  Bake per instructions and let cool.

I then poured a small jar of caramel sauce on top of the cooled cake.

I poured some crushed nuts on top of the caramel layer.  You can add as much as you would like.

I added some candy coated pieces in with my chopped nuts.  You can put chocolate or butterscotch chips on top with the nuts if you like.

I spread a container of Whip cream on top of the caramel and nut layer.

I then crushed two chocolate toffee bars into pieces and sprinkled that on top of the whip cream layer.  You can use whatever candy bars you like in place of or added to the toffee bars.

Keep refrigerated until ready to serve.

Cornbread

I love to start with some pre made box items  like a cornbread mix and make a home cooked meal out of it. We are all very busy and I don’t want to spend too much time in the kitchen but still want to prepare and eat great food. I paired this with chilli recipe to follow.

Cornbread

I pour on box of cornbread mix in a bowl. I will follow the box instructions but to that I will add any or all of the following items: chopped green chilies, jalapenos, peppers of any color, onion, black beans, cheese of any kind and any other Mexican item you want to add. Now you can add about 1/3 of a cup of each item above. You could add some seasoning now and anything you like is fine. I added some Tai Pepper powder. If it seems too wet when you are done adding extra things you can add a little flour.

Mix ingredients and put into a nonstick sprayed pan. I used a 9 x 9 for mine.

Bake the cornbread on 350 for about 40 to 60 minutes or until it is not tacky when poked in the center with a toothpick.

This spice cornbread is great when served with Chili. That recipe is to follow.

Chicken Fried Rice

This great chicken fried rice recipe is easy to make and everyone will love it. Great to have left overs because it taste better the next day.

Chicken Fried Rice

In a large frying pan cook on medium heat onion and celery with the boneless, skinless chicken of your choice. I use chicken thighs or you could use chicken breast or tenders. Use any amount of onion and celery that you like or omit if you don’t like them.

Make rice (minute or long grain) according to package directions. When it is finished you put it into a large frying pan and start to recook the rice.

Add the chicken and veggies to the pan of the fried rice and flip or stir until hot. Add chicken stock so it doesn’t get too dry before it cooks through.

Add a bag of frozen or a can of mix vegetables, mushrooms and seasoning to the chicken fried rice.

Some seasons you could add are ginger, parsley, tai, and soy or chili sauce.

Taste the chicken fried rice every 5 minutes to make sure it is seasoned to your liking.

Teriyaki Green Beans

Teriyaki Green Beans is a wonderful recipe that I use instead of traditional green bean casserole.

Teriyaki Green Beans

You start this with a pound of bacon. Fry it up crispy and put it aside.

In the bacon grease fry any amount you want of thinly sliced peppers of any color and onions. I then add frozen long green beans and cook till tender. You can use fresh if you like and just cook till tender.

When they are done I mix some honey and teriyaki sauce together (any amounts you would like, more honey for a sweeter taste and less for a more teriyaki taste) and pour it over the green bean mixture. Season the teriyaki green beans with salt and pepper and any other seasonings you like. Make sure to taste more than one and adjust seasoning to taste. Top with slivered or sliced almonds and the fried crumbled up bacon.

Toss the teriyaki green beans and simmer for a few more minutes.

Meatloaf

This meatloaf is a famous Sunday meal at my house when my kids were little. It is so comforting especially when paired with the loaded mashed potatoes which can be found in the comfort food pages. This will leave enough to have that wonderful leftover meatloaf sandwich which is good hot or cold.

Meatloaf

To make the meatloaf I start with a pound of ground hamburger and a pound of ground pork. You can use whatever you have or like. Some options are ground turkey and chicken or any combination of those.

you can use any or all of the ingredients below. I will add a couple of eggs, peppers, onions, jalapenos, mushrooms, seasoning of any kind and a fair amount of it, you can add a package of ranch or Italian dressing if you like. A package of onion soup mix will add lots of flavor to any meatloaf. I will season with Italian seasoning, parsley, garlic, paprika, or anything else that sounds good. You can use all no salt options if you want. Then you will need some type of crumbs like crackers, bread crumbs, crushed up chips or pretzels.

Mix the meatloaf well and put into a loaf pan. I then mixed together some ketchup, mustard, and some hot sause and spread it over the meat loaf. You can use whatever sounds good to you. Bake on 350º for about an hour or until it is 160º internally.

Let the meatloaf sit a few minutes and serve.

Stuffed Peppers

This was a recipe that was designed because we had too many green peppers that had to be used up but you can use any color of peppers for this recipe. This is a very easy recipe. It not only tastes wonderful but it is loaded with vitamins. It is a great way to get you kids to eat vegetables. This recipe will fill 3 peppers; you can adjust as needed for more peppers.

Nutritional value of Peppers

Stuffed Peppers

Cut 3 green peppers in half either way will work. Cook in the microwave for 2 minutes to shorten the cook time for the recipe.

I started by browning 1 or 2 pounds of lean ground beef depending on how many peppers you have to use. Add onion, seasoning and cooked unit it is soft. I then added veggies and you can put in whatever you like. I used Brussels sprouts chopped, broccoli, celery, and spinach.

Heat until it is cooked. I put about 1 cup of rice, low fat cream of mushroom soup in with some sour cream (fat free works if you want to us that instead) and added it to the lean ground beef.

Put mixture into peppers and top with bread crumbs. Bake on 360 for 30-40 minutes or until peppers are soft.

They work great for leftovers. The next day I heated up a stuffed pepper and topped it with a fried egg and some Sirach. Can you say Delicious breakfast.

Cheesy Potatoes

This is a wonderful cheesy potato recipe for any holiday or cold night home.   This was my mother's favorite recipe and will be yours too.  They were truly amazing. The potato is a good source of vitamin B6, Potassium, Copper and Vitamin C.  Check out the link below for more health benefits to eating Potatoes.

Cheesy Potatoes

Boil potatoes and when they are cool enough peel and cut up in little squares.  This can be done the day before for convenience.

Cut up butter and cheese to put on top.  Add plenty of salt, pepper, slice a stick of butter, a few scoups of sour cream, and half a package of cream cheese.  Stir and add cheese next.  A processed cheese works best.  (Velveta works well)

Bake on 350º for about 20 minutes then take out and stir. At this point you need to taste it to see if it needs more seasoning.   Add more cheese if needed.  Return to oven for another 20 minutes or until these cheesy potatoes are hot through.

Bacon Jam

This is my pinterest pluck for the week.  I took the Bacon Jam recipe from Pinterest and tried to make it.   It was very good but very rich.  I found it works best when used warmed up to coat another food or on something hot like buscuits.   Here is the original link to the pinterest Bacon Jam so you can try it.

Bacon Jam

I followed the recipe from the link and the pictures are below.

I cooked the bacon until it was almost done.  I added some chopped onion and cooked until the onion was cooked.  I then added the ingredients they said to add and cooked on low for a few hours stirring every 10 minutes.  It had to be watched because I think amount of brown sugar in it would make it burn easy if not watched.

I am not a fan of it right out of the refrigerator cold but warmed up on toast or biscuits it is wonderful.

We coated chicken wings with the bacon jam and it was amazing.

We seasoned chicken wings and put them in the oven on 350° for about 60 minutes.  I took the wings out and coated them with Bacon Jam and put them back in the oven for about 20 minutes or until the reach 170° internally.

Amazing.  The were sticky and sweet and had a wonderful bacon flavor.

Split Ham & Pea Soup

This is a wonderful warm winter comfort soup. You can use ham or not. I used the ham bone I put in the freezer from Christmas dinner. You can cook it on the stove or in the crock pot either way will produce a wonderful soup.

Split Ham & Pea Soup

I put the ham bone in some water and started boiling it. I let it boil for at least a few hours with whatever amounts of carrots, onion and celery you would like.  I removed the bone so I could pull the ham off it to put in the soup. I had to let it cool and added about a cup of split peas to the 5 quart pot of water along with a few cubes of chicken bouillon.

The peas boiled for a about an hour when I put the ham I pulled off the bone back into the pot.  I added some frozen peas and seasoning.  Anything will work.  I let it cook for a few more hours and used an emulsion blender to break down the veggies.

I will taste along the way and if it seems too plain you can add more chicken bouillon or extra seasoning.

Serve with crackers or bread.  Yummy on cold nights and snowy weekends.

Enjoy.
